Coffee Walnut Loaf Sharing

With Mothers Day just around the corner I thought it best to share a recipe that was just for the adults. There is not a sprinkle, choc drop or flowery shape cutter in sight. There is however coffee, making it an easy no-share treat just for the adults. This Coffee Walnut Loaf is sweet and nutty with a nice little coffee kick to it.

You might like to bake this for your own mother, for a mother you know or for yourself. Even better, print it out and leave it on the kitchen bench for someone else to make for you.

Coffee Walnut Loaf

IngredientsCoffee Walnut Loaf Cooling Rack

150g (1 ½ cups) walnuts
125g butter
220g (1 cup) caster sugar
125ml (½ cup) milk
2 tablespoons instant coffee
200g (1 1/3 cups) self raising flour
2 teaspoons ground cinnamon
2 eggs


  1. Preheat oven to 160C. Grease and line your loaf pan.
  2. Toast your walnuts. Chop half of them and set aside.
  3. Stir your butter, sugar, milk and coffee in a small saucepan oven low heat to melt.
  4. Sift flour and cinnamon into a bowl.
  5. Lightly beat your eggs and stir into the flour.
  6. Add your butter mixture and the chopped walnuts. Stir to combine.
  7. Pour your mixture into your prepared loaf pan and bake for 15 minutes.
  8. Remove from the oven and quickly top the loaf with your remaining walnuts. Return to the oven and continue to bake for a further 30 minutes.
  9. Remove from oven and cool top side up on a wire rack.

Coffee Icing

While this icing is entirely optional I do highly recommend it because no one can resist anything with a good squiggly drizzle of icing on it. And because it is a great way to sneak in a bit more of the coffee flavour.


2 teaspoons instant coffee
1 tablespoon boiling water
160g (1 cup) icing sugar
10g butter, softened


  1. Combine your coffee and boiling water, stir to dissolve.
  2. Sift your icing sugar into a heatproof bowl and stir in the butter.
  3. Add your coffee mixture and continue stirring to form a paste.
  4. Place your bowl over a saucepan of simmering water and stir until your icing is a thin consistency.
  5. While still warm, drizzle your icing over the loaf and stand until set.

This Coffee Walnut loaf is delicious fresh and served with a big mug of coffee of course. After a couple of days, when it has lost its freshly baked bounce, I found that you could serve it in big thick slices with a smear of butter on top.
