Veggie ‘cakes’

 

These work as a healthy side dish for dinner or a great lunch box snack. I made these veggie ‘cakes’ for my girls this week to try and increase their savoury food and veggies and it worked!

 

I whizzed up some cauliflower into a crumb like consistency and pushed it into the base of silicone muffin cases. Pop this into the oven to set it while you grate up your other veggies.

 

Grate up whatever other veggies you have available and mix them together. I added a little bit of diced bacon to mine too. Place handfuls on top of your cauliflower base and push it down to compact it. Top with a fine grating of cheese and put them in the oven.

 

Take them out when they are all golden and crispy on top and serve. As you can see, these were a huge hit and will be making another appearance on our dining table soon.
