Look no further, this is your Australia Day damper this year. My husband wanted me to call it my Green and Gold Aussie Damper but I thought I would stick with the boring but informative Spinach & Fetta Damper.

This would go perfectly with a BBQ, or a fancy white tablecloth dinner, or a picnic at the beach, or as a snack in the park. You know what, you could even eat it on other days besides Australia Day! But by far the best day to eat this damper, is the day it is made, even better if it is fresh and warm straight from the oven.

Spinach Fetta Damper


1 tablespoon olive oil Spinach Fetta Damper Pinterest
1 medium white onion, finely chopped
300g leafy greens like baby spinach leaves or kale
1 tablespoon fresh thyme leaves
1 tablespoon fresh rosemary, finely chopped
300g (2 cups) self raising flour
80g (½ cup) wholemeal self raising flour
50g cold butter, chopped
120g (1 cup) parmesan cheese, coarsely grated
250ml (1 cup) buttermilk
1 egg
60g danish fetta cheese, crumbled


  1. Heat oil in a large frying pan and cook onion until softened. Add your greens and cook until wilted. Remove from heat and mix in the herbs and season with salt and pepper.
  2. Preheat your oven to 180C and line a large baking tray with baking paper.
  3. Sift flours into a large bowl and rub in the butter. Stir in half the parmesan. Combine buttermilk and egg, then stir into flour mixture to make a soft sticky dough.
  4. Knead dough on a floured surface until smooth, then press into a rectangle shape (roughly 20x30cm). Spread your spinach mixture over the dough, leaving a 2cm strip along one long side. Sprinkle remaining parmasen and the fetta over the spinach. Roll up firmly from the other long side and push edges together to seal. Place on baking tray and make 8 slices across top, without cutting all of the way through. Brush top with extra buttermilk.
  5. Bake for 40 minutes. A finished loaf will sound hollow when tapped. Let stand for 30 minutes before serving.

Bonus Tip: Use leftover buttermilk to make some Blueberry Buttermilk Pancakes for breakfast over the long weekend!
