Boreka Recipe
A Boreka is a Turkish filled pastry and to be honest there are hundreds of different fillings and even different doughs or pastries for the outer shell. Any way you look at them, they are yummy. I have made them with a bread like dough before, though I found this to be a bit heavy. This time I made them with puff pastry and they went down a treat. For half the mix I made triangles, the other half I made into rolls. The filling was essentially sweet potato and lentils. Here is my tasty boreka recipe but I encourage you to experiment and make combinations of flavours that you like.
- 1 large Sweet Potato
- 1 cup Red Lentils
- 1 small Onion
- 1 tsp Cumin
- ½ tsp Paprika
- 2 cups Vegetable Stock
- Puff Pastry
- 1 Egg for brushing
Simply put it all in a big pot and cook until soft and mushy and you can give it a good stir to combine it all into a wet blob. This took about 20 minutes. It obviously shouldn’t be too wet or it will just leak out of your pastry. Wrap up little parcels in your pastry leaving an edge to crimp it closed. For this mixture I used 3 sheets of puff pastry. Brush with egg and bake until pastry is golden and flaky. Mine took about 15 minutes on 180C.
I love to dip mine in sweet chilli sauce!
