Laksa at Home

 

This is a quick and easy laksa recipe that you can make at home. Word of warning - Be wary of how hot your chillies are! Hot tip - you can clean chilli oil that is burning your fingers after cutting up hot chilli’s by rubbing your fingers through your hair. Apparently the oil on your hair helps cut through it. Luckily my hair was due to be washed.

Ingredients:

      • 1 tablespoon vegetable oil
      • 185g laksa paste (I found mine at a market in Malaysia but the supermarket has them too or if you are fancy you can make your own paste)
      • 2 cups (500ml) chicken stock
      • 800ml coconut milk
      • 2 tablespoons fish sauce
      • 800g pumpkin, cut into cubes
      • 400g broccolini, chopped
      • 250g vermicelli rice noodles, cooked
      • 300g tofu, sliced
      • 1 cup coriander leaves
      • 2 chillies, sliced

Method:

Heat oil in a large saucepan. Add laksa paste and cook until fragrant (about 1 minute). Add the stock, coconut milk and fish sauce. Bring to the boil and add pumpkin. Now is a good time to get your noodles soaking. Pumpkin will take about 10 minutes to cook through, just check for tenderness. Add broccolini and cook for 2 minutes.

To serve, put noodles in bottom of bowl, spoon soup over the top. Top with tofu, coriander and chillies.
