Apple & Pork Meatballs

We love finger food in this household, and food on sticks, it just makes things taste better somehow. My girls always love it when I make chicken balls so I thought I’d try something a little different and see if they liked it. This is a cheap, quick and healthy recipe for Apple & Pork Meatballs that is very versatile and it would be easy to add some veggies to the mix too.

Apple & Pork Meatballs

Ingredients

500g minced pork
1 big apple – peeled, cored and grated
1 teaspoon of fennel seeds, ground
1 tablespoon chia seeds soaked in 3 tablespoons of water (or 1 egg)
1 slice of dehydrated bread smashed to crumbs (or 3 tablespoons of breadcrumbs)
Optional – Small handful of dehydrated mixed veggies that have been blitzed (carrot, celery, beetroot, zucchini)
1 tablespoon of oil
S&P to taste

Apple & Pork Meatballs

 

Prepare all of your ingredients as listed above – this mostly involves smashing, so have at it and let your anger out! Mix everything together. Roll into balls. Place on a baking tray (either spray with oil or cover with baking paper) and bake in oven at 180C fan forced for 15 minutes. Please note that cooking time may vary depending on how big your balls are. As the cook you get the right to taste test to make sure they are cooked, then again to make sure they are cooled for the kids, then again just to be sure, ok one more as you plate up because it rolled off the plate.

 

You can serve these on their own as appetisers or as part of a party platter, they are great for popping in lunch boxes and of course served for dinner either on spaghetti, with a big colourful pile of veggies, veggie fried rice, mash potato … oh my, there are so many options! Oh, they also freeze well so you can make them ahead or split your batch in 2 and get double your meal out of it.
