Bacon & Egg Cupcakes
Oh yes, that’s right, bacon and egg cupcakes!
There are a few breakfasts that make the shortlist for special occasions and bacon and eggs is one of my husband’s favourites. I just thought I would mix it up a bit and make them special and fun. These are super easy too. You don’t have to stand over the stove and slowly cook a few at a time, you just pop it all in the oven and walk away to watch the present opening or to enjoy that first cuppa of the day.
I buttered the outside of the bread to be sure it would slide out easily then just gently pressed it in to the muffin tray being careful not to poke any holes in it. I popped this into the oven while I prepared the rest of my ingredients which really only took a few minutes. The oven was about 180C. Then, simply crack an egg into the toast ‘cup’ then sprinkle the top with lots of bacon. This went straight into the oven and I pulled it out when the egg had turned white. The toast wasn’t too crunchy, the bacon was crispy and the eggs were oozey in the middle.
You can get creative with these and really put anything in the toast cup. Add a few veggies, sprinkle some chives, make a scrambled egg version. Guaranteed to be a hit. Cake for breakfast, why wouldn’t it be?!
