Caramel Ice Cream

Over the Christmas and New Year festivities there are plenty of meals prepared for the celebrations and sometimes it can get fairly elaborate and time intensive and stressful.

Pavlova

On Tuesday this week I made this pavlova for one of our Christmas celebrations – yes, it was amazingly delicious and not a lick was left on anyone’s plates. Hot Tip: Pavlova’s use lots of egg whites – be prepared to use your leftover yolks. I made a quick homemade mayonnaise to drizzle on backyard BBQ salads.

Now that the festivities are (mostly) over, and it is New Years Day, I am sure everyone wants to wind down, have something delicious and lazy. I have the solution. I think that this is the easiest homemade ice cream you could possibly make.

Caramel Ice Cream

Caramel Ice Cream with Berries

Grab 300ml cream and whip it until you have peaks. Add a tin of of caramel (top n fill) and mix into your whipped cream until all combined. Spread your whipped mixture into a tin or freezer safe dish lined with baking paper. Freeze overnight or if impatient for a good few hours.

You could easily add some extra goodies to your ice cream mix. Try chopped nuts, smashed maltesers, rock salt, a shot of your favourite liqueur, or whatever takes your fancy.

Caramel Ice Cream Eat Me

I sprinkled mine with fresh berries and some chocolate flakes. You could even use it like a cold dip and dunk fresh fruit in it, an especially good option if you have left making it a little late for it to freeze.

No fancy equipment and gadgets, no churning for hours, no hard work at all. Simply whip 2 ingredients together and freeze. Yum!
