Would you hug me if I told you that can have your chocolate and be guilt free and healthy too! This dessert is rich and very sweet and will satisfy your cravings without leaving you with the guilt. I found this to be quite rich and so I served it with fresh fruit and some mint. The options are pretty endless with this basic recipe as a base – you could layer it into a tiramisu, use it as a sweet dip, freeze for longer to make it more like an ice cream, add extras to the mixture like nuts or berries or even chilli, you are only limited by your cravings.
My husband is usually pretty sceptical about any healthy dessert options I offer, but he actually really enjoyed this one and probably wouldn’t have even known it was tofu if I didn’t tell him. So my big tip is that if you are trying to push healthy choices but have resistors, don’t tell them it is healthy – they will never know!!
Chocolate Tofu Mousse
340g silken tofu
280g dark chocolate
2 tablespoons maple syrup**
1 tablespoons vanilla extract
**Real maple syrup is full of antioxidants but you could easily substitute any sweetening – golden syrup, honey, agave nectar or hey – just go without.

- Blend tofu until smooth.
- Melt your chocolate until smooth using your own preferred method.
- Add your syrup and vanilla to the chocolate and stir to combine.
- Pour your chocolate into your tofu and combine until creamy.
- Chill your mousse until set. I did a quick chill in the freezer for about an hour and it was ready, if you have longer just cover and chill in the fridge.
This recipe is vegan friendly, no nuts, egg free, allergy friendly, gluten free, low GI, and if you serve it in a mason jar it is totally hipster safe – so I think it is pretty safe to say that this is the magical unicorn of desserts!
