Healthy Mini Muffins
I love baked treats and I have a sweet tooth and so I was surprised when these little muffins actually tasted good and were relatively good for you or maybe it is just that they aren’t quite so bad for you. There are heaps of flavour variations you could do, simply pick your favourite combination and go for it. We like to make ours in mini cupcake tins as they are perfect portion size for littlies and big kids, that’s us, can have 2 or 3 with a cuppa. These are really simple to make and my 3 year old did most of it herself, I just measured things out, did a final good mix and the hot stuff. Here is what we made.
Ingredients:
- 2 1/2 cups of self raising wholemeal flour
- 1/4 cup stevia
- 3/4 cup milk
- 1 egg
- 1/2 cup vegetable oil
- 2 tsp vanilla
- Flavours - I used a big handful of blueberries that we froze at Christmas time and a small handful of chopped dark chocolate
Method:
Combine all the ingredients and bake until cooked! Simple huh. And relatively guilt free.
