Let’s not over complicate this one. Simple, easy, tasty and the kids will love it. Winning on all fronts. I have made plain coconut bread a few times before (same recipe just ditch the sprinkles) and it has been a hit with kids and adults alike but this time I amped up the wow factor by simply adding in some sprinkles. Because really, according to the kids anyway, sprinkles make everything better.
Rainbow Coconut Bread
1 cup coconut
¾ cup milk
½ cup caster sugar
1 cup self raising flour
¼ cup sprinkles
- Preheat the oven to 160C (fan forced) and line a loaf pan with baking paper.
- Combine all of your ingredients in a bowl and mix to combine.
- Pour mixture into your loaf pan and bake for 40 minutes.
