Choc Chip Cookies

I’m going to be upfront with you, these are not healthy. Ok, that got rid of anyone who may have clicked on Choc Chip Cookies under the belief that they were healthy. These are good for you, in a different way. They are delicious and soul warming and it gives you warm fuzzies to share them. They turn out just crispy on the outside but soft and fluffy on the inside, exactly what you want in a cookie.


125g Unsalted Butter
185g (1 cup) Soft Brown Sugar
1 teaspoon Vanilla Extract
1 egg {or if you didn’t check your fridge first like me, you can mix 1 tablespoon of chia seeds (smash them up a bit first) with 3 tablespoons of water and let them soak for about 5 minutes}
1 tablespoon milk
215g (1 ¾ cups) Plain Flour
1 teaspoon Baking powder
250g (1 ½ cups) dark chocolate chips {this is a lot so you may want to reduce this – maybe}


1. Preheat the oven to 180C and line your baking tray with baking paper
2. Cream the butter and sugar. Mix in your vanilla. Add your egg(or substitute) and beat well. Stir in the milk.
3. Sift your flour and baking powder into a large bowl, then fold in your butter and egg mixture. Stir in the choc chips.
4. Divide the mix into about 16 blobs on your tray, evenly spaced.
5. Bake for 15 minutes. Remove when lightly golden on the outside. Cool on a wire rack until you can pick them up without scolding yourself. This timing may vary depending on if you have toddlers watching you or not. If they last past the day you baked them, they will store in an air tight container for about 4 days.
