Spiced Apple Cake

Ok, so this cake was so delicious that I completely forgot to take a photo of it and it wasn’t until I was half way through eating my slice that I realised it was something that I just had to share with everyone. So, I am sorry for the lack of pretty pictures, you will just have t trust me that it is delicious. I made a yummy chocolate cream cheese icing to go on mine, but I think this cake would be delicious on its own too. Without further a do, here is my spiced apple cake recipe.

Ingredients

      • 2 cups wholemeal flour
      • 2 tablespoons cacao powder
      • 1 teaspoon bicarbonate of soda
      • 1 teaspoon baking powder
      • 2 teaspoons ground cinnamon
      • 1 teaspoon ground ginger
      • 250g unsalted butter, softened
      • 2 cups brown sugar
      • 2 eggs
      • 3 green apples (600g), peeled, cored and grated

Method

1. Preheat oven to 180C. Grease and line cake tin/s. You may wish to divide the mixture between two tins so you can make a layer cake.

2. Sift flour, cacao, bicarb, baking powder, cinnamon and ginger into a large bowl.

3. Beat butter and sugar until light and fluffy. Add eggs one at a time, beating well. Stir in apple. Add flour mixture and stir until combined.

4. Divide mixture between cake tins, smooth the surface and bake for 35 minutes. Adjust the time if cooking as one cake. Cool on a wire rack.

 

Chocolate Cream Cheese Icing

      • 250g Cream Cheese, softened
      • 100g Butter, softened
      • 1 teaspoon milk
      • 100g Dark Chocolate, melted and cooled to room temperature
      • 1 cup icing sugar
      • 2 tablespoons cacao powder

Beat cream cheese and butter until soft and fluffy. Add milk and chocolate. Sift in icing sugar and cacao. Beat until fluffy. Spread about a cup between the two cakes and the remainder on top. You could even be fancy and dust with icing sugar to serve.
