Choc Banana Muffins

Choc Banana Muffins

This recipe for mini choc banana muffins is like gold. It has no refined sugar, no eggs, and no nuts. They are full of vitamins, proteins and fibre. They are healthy little treats that can be made with 1 bowl and in 20 minutes from go to whoa! And despite being healthy they are actually super moist and tasty which makes them a winner in my book.

My Mini Choc Banana Muffin Recipe

Mini Choc Banana Muffins

Choc Banana Muffin RecipeTo stop your choc chips from all sinking to the bottom, coat them lightly in some of the flour from your recipe. For small muffins like mine, mix half the choc chips into the batter and sprinkle the other half on top after you have spooned them into your cases. Try to use small choc chips as these are lighter.

If you wanted to be even healthier or try something different you could replace the choc chips with perhaps walnuts or cranberries, sultanas, or dried apple.

You can store these in an airtight container for 3 days at room temp, 5 days in fridge, freeze well for 3 months.

I topped mine with my chocolate avocado when we had them for afternoon tea at home, otherwise they are great plain. Can also heat them for 5-10 seconds to make them irresistible with your morning cup of coffee.
