Coconut Prawns

These coconut prawns are so easy it’s crazy and that is the type of recipe I bookmark. If you need another reason a good one is that they aren’t deep fried! That’s right, so now they are quick, easy and healthy! Seriously, what more could you want?

Actually, these were very sweet so I would recommend serving them with something to cut through this, like some freshly squeezed lime or even better a green mango salad.

Ingredients for my it’s-so-easy-it’s-crazy Coconut Prawns:

500g green prawns, peeled
2 eggs whites, beaten until light and fluffy
2 tablespoons of cornflour
1 cup of desiccated coconut

Method:

Lightly coat prawns in cornflour
Dip in the egg whites
Coat in coconut
Cook in a very hot non stick pan with ½ tablespoon of oil

These are possibly the quickest and easiest coconut prawns and they will be gobbled up pretty quickly. And they aren’t deep fried! Winner!

What do you do with your prawn peelings? I usually wrap mine up in the paper wrapping and freeze them until bin day so they don’t stink out the garbage bin.
